Q. If I get double-sided table numbers, will the other side show through?
A. It depends on the lighting and the thickness you order. The weight of the standard cardstock is nice and thick (100lb for the cream and 120lb for the white and ultra white). They're not flimsy, but if you're having your reception outdoors in bright lighting, then you will probably be able to see through to the other side if you order double-sided cards (especially if you hold them up directly to the sun/bright light).
If you're having your reception indoors and not under super bright lighting, then the standard cardstock should work fine even for double-sided cards.
If you want zero chance of being able to see through them, then you might want to go with the ultra thick stock (see photos of the thickness in the product images.
